This is one of my favorite soups, it’s filling, cheap and very tasty. Will make about 6 meals.

Ingredients

  • 1 Ham Shank
  • Lentils ( a big handful)
  • Split Peas (a big handful)
  • 1 Onion
  • Carrots
  • Pepper

Method

Boil the shank and chopped onion in a big pan for about half an hour, then add the carrots, top up water if needed and simmer until cooked. Next take out shank and remove fat and skin, roughly chop meat up and return to pan and add lentils, split peas and pepper simmer for another half hour or more, I like to have it cooking all day (but then I have the time) the longer it’s cooked the better it tastes, if you are going to freeze it let it cool first. When you reheat add water because it will be very thick. Serve with crusty bread, enjoy 🙂
